In November we invited food lovers to register their interest for a food tasting event at the Maryborough Hotel & Spa. We selected ten passionate candidates from the applicants who came together on the 12th of November to see what was cooking in the two Rosette awarded kitchen.
After a glass of bubbly and a spot of wine-tasting the foodies got down to business. They were treated to a selection of Chef Brendan’s culinary delights from Bellini’s Bar & Restaurant’s soon to be released Autumn/Winter menu.
MasterChef finalist and food blogger, Niamh Mannion, said that she found the whole evening very inspirational and came away brimming full of new flavour combinations and recipe ideas to try out. Bia Sasta founder and blogger, Elke O’Mahony from Cork, was particularly impressed with the ‘perfect execution’ of the food, admitting that her expectations were completely surpassed on the night: “Excellent food, to be honest I did not expect it coming in tonight; fair play to the kitchen team. Chef Brosnan was so subtle and humble about our complements and he genuinely wanted our opinion which is so refreshing.”
Food enthusiast Adam Holden was particularly impressed by the starter of potato espuma, crispy potato skins & house pancetta, saying that he found it “spectacular”.
Expectations were also exceeded for baker and food enthusiast Darina Coffey:
“Who knew that kind of talent was right here in Cork? Before now, I discounted hotel restaurants but what Brendan produced tonight was nothing short of amazing, he has changed my mind – I would definitely come back!”
