Delicious Dish


'Scallops with Black Pudding, apple and locally brewed Cider' at Faithlegg House Hotels' Roseville Rooms Restaurant has won Delicious Dish at this year’s AA Hospitality Awards. The public vote category was added to this years’ ceremony to mark the launch of the AA’s new standalone restaurant Rosette award programme.

The AA Delicious Dish award represents a dish much lauded by the public, as voted for by the public. The dish was created by Faithlegg's Head Chef Jenny Flynn, who was in attendance to collect the award alongside restaurant manager, Joe Barnes.

An AA Rosette holder for the past six years and a proud member of Good Food Ireland, Faithlegg House Hotel has recently been awarded 2 AA Rosettes for Culinary Excellence in 2015. Jenny Flynn's delicious cuisine showcases all that is best and finest from local artisan producers, but the charming rooms have been refreshed in a way perfectly in keeping with this well-loved Waterford gem - the perfect setting in which to enjoy Flynn's fine food.

Other eateries in the running for the award were:
- The Castle Leslie Estate, Co. Monaghan, for its ‘Mojito of Lime Confit’
- Bunsen, for its ‘Cheeseburger’
- Fire Restaurant, for its ‘Sunday Roast’
- Hayfield Manor, for its ‘Pan Seared Union Hall Hake Fillet’
- Classiebawn Restaurant, at Radisson Blu Hotel, Co. Sligo, for its ‘Feather Blade of Prime Irish Beef’
- Waterfront House Restaurant, for its ‘Trio of Lamb’
- Fade Street Social, for its ‘Irish Lamb Stew’

As well as assessing accommodation, the AA also awards Rosettes for Culinary Excellence. AA Inspectors are trained in the assessment of food standards and have a keen understanding of modern trends in quality dining. The AA draws on a wealth of experience in Ireland and the UK and provides workshops and consultancy services for restaurants and chefs who are looking to develop their food offerings.

AA Rosettes are awarded on a 1 to 5 scale but are only awarded when restaurants are already operating to a very high standard. To be awarded 1 AA Rosette is a mark of consistent food quality and high standards.

The three principal hallmarks of a restaurant cooking to 1 and 2 Rosette standards include;
• Quality of Ingredients
• Accuracy of Cookery
• Clarity of Flavour

Recently, one of our trained AA Inspectors awarded Bang Restaurant, Pichet, Coppinger Row 2 Rosettes each after a personal assessment. Detailed feedback was provided alongside recommendations on everything from service, hospitality and of course, the food on the plate.


As part of the newly launched AA standalone restaurant Rosette award program, AA Inspectors will now personally visit and grade restaurants. Detailed feedback and recommendations from industry experts will be provided and deserving restaurants will be awarded with AA Rosettes for Culinary Excellence if the highest standards are met.
