AA Hotels and Bed and Breakfast

Uncovering excellence is the mainstay of Hospitality at the AA. After all, we did invent the 1-5 star classification system for hotels that is now recognised all over the world.

Every hotel in the AA accreditation scheme has been personally visited by our Inspectors because we know that our Members trust our word. When we say a hotel is superb it is not because they have asked us to or have paid us to – it is because they have proved it to us.

We apply the same protocol when awarding truly outstanding food. Our awards are made solely on the basis of a meal visit carried out by our team of pedigreed Hotel and Restaurant Inspectors, who possess an unrivalled breadth and depth of experience in assessing quality. For our Food Inspectors, the top and bottom line is the food.

Rosette award description

As well as assessing accommodation the AA also awards Rosettes for food excellence. AA Inspectors are trained in the assessment of food standards and have a keen understanding of modern trends in fine dining. The AA can draw on a wealth of experience in Ireland and the UK and provides workshops and consultancy services for restaurants and chefs who are looking to develop their food offerings.

AA Rosettes are awarded on a 1 to 5 scale but are only awarded when restaurants are already operating to a very high standard. To be awarded 1 AA Rosette is a mark of consistent food quality and high standards.



1 Rosette

These restaurants achieve standards that stand out in their local area. They serve food prepared with care, understanding and skill, using good quality ingredients. The same expectations apply to hotel restaurants, where guests can eat in with confidence and a sense of anticipation.

2 Rosettes

Excellent restaurants that aim for and achieve higher standards and better consistency. A greater precision is apparent in the cooking, and there will be obvious attention to the selection of quality ingredients.

3 Rosettes

Outstanding restaurants that achieve standards that demand recognition well beyond their local area. The cooking is underpinned by the selection and sympathetic treatment of the highest quality ingredients. Timing, seasoning and the judgment of flavour combinations will consistently be excellent. These virtues tend to be supported by other elements, such as intuitive service and a well-chosen wine list.

4 Rosettes

Among the top restaurants in Ireland, where the cooking demands national recognition. These restaurants exhibit intense ambition, a passion for excellence, superb technical skills, and remarkable consistency. They will combine appreciation of culinary traditions with a passionate desire for further exploration and improvement. There are very few restaurants with Four AA Rosettes.

5 Rosettes

The pinnacle, where cooking compares with the best in the world. These restaurants have highly individual voices, exhibit breathtaking culinary skills, and set standards to which others aspire to, yet few achieve.
