Bellini's at Maryborough House

There's a whiff of glamour at this Georgian country-house hotel, with later additions tacked on, surrounded by 14 acres of well-maintained gardens and woodland. Refurbishment has given a sharp new look to the bar and restaurant, now called Bellini's, giving it a modern glossy sheen. Fresh, locally sourced produce is the kitchen's stock-in-trade, with the long menu a list of bright and modern ideas. Thai-style salmon and cod patties, served with lime aïoli and a rice noodle crisp, and terrine of confit duck, with herby pistachio crumble and beetroot and raspberry purée, are the sort of cleverly conceived starters to expect. Quality and accurate timings never fail to impress, seen in intricate main courses of rolled belly pork with spicy ribs, smoked apple, sweet cabbage and apple jus, and roast salmon steak stuffed with fennel mousse served with beetroot and salsify salad. Desserts end assertively with perhaps Baileys parfait with mocha syrup.
