The Cronin family has owned property in hauntingly beautiful Gougane Barra since Victorian times, when its potential as an idyllic retreat was first fully realised, though the present hotel dates back only to the 1930s. Those views over the lake towards the mountains of Cork look especially magnificent from the ample windows of the dining room, where fine seasonal artisan produce takes centre-stage. There are no airs and graces to the cooking, just careful presentation in tried-and-true formulas that never lack for support. Dingle Bay smoked salmon, or a double-act of Clonakilty black and De Róiste white pudding, with bacon and apple sauce, might fire the starting-gun, before grilled cutlets of exemplary West Cork lamb with colcannon and port gravy make their appearance. Fish could be herb-crusted hake with creamed leeks and peas in prawn sauce, with flourless pear frangipane and butterscotch ice cream to round things off in style.
