The kitchen team in this immaculately-preserved Georgian country house certainly aren't scared of a bit of domestic hard graft: no corners are cut here - meat and fish is smoked in-house and everything is made from scratch from fresh, judiciously-sourced local produce. The setting for all of this laudable culinary endeavour is the palatial Lime Tree Restaurant, where all the detail of the original ornate plasterwork is picked out in gold paint and a crystal chandelier hangs above pristine white linen-clothed tables on polished timber flooring. The kitchen deals in a broadly modern Irish style of cookery, sending out ideas such as black pudding and glazed pork belly with pickled leeks, apple purée and cider jelly, followed by seared wild venison with butternut squash purée, Savoy cabbage, pickled mushrooms and candied pumpkin seeds.
