The Redcastle estate can trace its lineage all the way back to a 16th-century proprietor called Cathal O Doherty. At one point, it was owned by a Pennsylvania farming family, but today it makes a superbly located northwestern seafront hotel in the modern boutique style. A terrace overlooking Lough Foyle is a covetable place for a sundowner, informal eating is offered in the Captain's Bar, or repair to the Edge dining room for some traditionally based Irish cooking with modern flourishes. Start with a tartlet of Cooleeney Camembert and fennel marmalade with crispy bacon, cranberries and tarragon, or smoked chicken Caesar with all the trimmings. Mains might take an oriental theme for roast cod with pak choi, mussels and ginger, and lemongrass jelly, or else aim to fortify by means of slow-braised lamb shank with roast celeriac and champ on tomato fondue. Conclude with Irish cheeses, or blackberry Bakewell sponge with cardamom custard and blackberry sorbet.
