The Ashling is a large, modern and glitzy hotel near Phoenix Park and Dublin Zoo, where Chesterfields Restaurant occupies a spacious, softly lit room with plushly upholstered dining chairs and a busily patterned carpet. The kitchen has some success with its combinations of flavours and textures, and dishes are noted for their accurate timings. This is shown in seared scallops with pancetta crisps, cauliflower purée and hollandaise, for instance, then roast breast of guinea fowl with crisp gnocchi, sautéed curly kale and Madeira jus. Prime native produce is the stock-in-trade, among it carpaccio of wild Wicklow venison, with raspberry vinaigrette and a pomegranate and pine nut salsa, and line-caught fillet of cod in Parma ham served with spinach and brown shrimp ravioli, fine beans and lemon cream. Irish farmhouse cheeses bring up the rear along with puddings along the lines of autumn berry Eton Mess and classic crème brûlée.
