Ten minutes out of the city centre, Dublin's Clontarf Castle Hotel is a beguiling mix of ancient structure and modern boutique luxiness. Dating from the 12th century, it served as headquarters for the English army's quartermaster-general during Cromwell's rampages, but achieved its present apogee on reopening as an upmarket hotel in 1998. The Fahrenheit Grill is the destination restaurant, a dramatic showcase room for some striking modern Irish cookery. Kick off with a breakfast salad of crisp-fried egg, bacon and Clonakilty black pudding, or scallops and pork belly with sweet potato purée. Move on to substantial main courses such as breast and confit leg of duck with carrot purée in vanilla and cardamom jus, or cod with a cassoulet of chorizo, white beans and tomato, and saffron mash. It all concludes with Bramley apple crumble and salted caramel ice cream, wild honey parfait with macerated figs, or lemon pannacotta with blackberry compôte.
