McLoughlins Restaurant at Roganstown Hotel and Country Club

A sprawling resort with golf, spa and conference facilities, Roganstown is also home to the impressive McLoughlins Restaurant. Located in a wood-panelled room within the hotel (the original part of the structure was a farmhouse in a former life), there's plenty of room between well-dressed tables. The kitchen seeks out first-class ingredients and delivers a menu that has ambition and a contemporary feel. A first course dish of lightly smoked scallops (nicely seared) arrive under a cloche to make an impression, served with a silky purée of minted peas and some pickled vegetables. Next up, among main courses, suckling pig cutlets are tender and moist, coming with a 'Pomme William', braised red cabbage and sweet potato purée, while a fishy main might be pan-fried salmon with a shellfish velouté. There are modern cooking techniques on show, not least in a dessert of saffron-poached pear with textures of raspberry.
