Wilde - The Restaurant at The Westbury Hotel

The restaurant at this city centre hotel is a swishly decorated and furnished room dedicated to Oscar Wilde. The kitchen picks the cream of Ireland's produce and showcases it to good effect on a menu that's a beguiling mix of modern ideas. Prawn and crab cocktail with Marie Rose sauce sounds familiar enough, but here it's an exemplary example of the beast, and jostles for attention with foie gras crusted in pain d'épice, served with pear salad and caramelised walnuts. Among main courses, spicy duck has been given the Eastern treatment, served with honey and soy sauce, a spring roll and squash purée spiked with chilli. Alternatively you might go for a daily fish dish - say, properly timed fillet of halibut with smoked bacon essence, Jerusalem artichokes and roast salsify. Puddings are a strong suit too, among them perhaps red berry vacherin with blackberry sorbet.
