In a quiet spot on the outskirts of the city towards Galway Bay, The Ardilaun Hotel has been built up around a 19th-century property, with the restaurant looking out on its five acres of grounds. The kitchen takes a European-wide stance, with starters along the lines of smoked haddock and potato cake on spinach with sauce vierge and pickled cucumber, and a salad of crisp pancetta, radish, peas and mozzarella with coriander and green pepper dressing. Well-chosen ingredients go into main courses too: a medley of Galway Bay seafood with a ragoût of sweetcorn, fennel and spring onions and truffle and chive cream, and roast bacon-wrapped chicken breast stuffed with sage and onions on cauliflower purée with mushroom sauce. Lemon meringue pie with berry compôte is a good way to end.
