It isn't possible to get much further west on the European continent than this spot. The Dingle Skellig Hotel is a sprawling establishment right on the coast with glorious views all round. A family-friendly sort of place, there's a kids' club, leisure facilities, a room for teenagers to hang out, plus a spa for the grown-ups.The main dining option is the Coastguard Restaurant (food is also available in the bar, bistro and cocktail lounge), with its stunning view over the bay through capacious picture windows.The kitchen works with the excellent produce around these parts, with locally landed fish and West Kerry lamb stealing the show. The modern Irish repertoire runs to a classic combination of pan-fried scallops with local black pudding, pea purée and Parma ham crisps, each element cooked correctly, followed by seared breast of duckling with a confit fig and sautéed fennel. Finish with orange and rhubarb crème brûlée.
