Carrig is a lovingly restored Victorian country manor in acres of colourful woodland gardens with views across Caragh Lake to the Kerry Mountains. Inside, the genteel house is done out in period style, with turf fires sizzling in cosy, chintzy lounges, while the dining room is the very image of 19th-century chic; all William Morris wallpapers, swagged curtains, polished floorboards, and formally laid tables. The cooking, on the other hand, takes a more up-to-date approach, lining up superb local ingredients and sending them to finishing school: crab could get a modish three-way treatment as ravioli, soup and pasty, and might be followed by Skeganore duck breast with vanilla and lime potato purée, and sweet port and brandy jus. For dessert, maybe prune and Armagnac crème brûlée.
