Close to Dublin city centre and the airport, Barberstown Castle presents a fascinating timeline running through eight centuries of history from its 13th-century crenallated tower to wings added by Elizabethan and Victorian inhabitants, which now house the elegant dining rooms. You can take oodles of period character as read: amid walls hung with tapestries, wooden and flagstoned floors, and throne-like wooden chairs at candlelit, linen-clad tables, dinner is always a bit special, and staff make sure it all ticks along in a smooth and professional manner. Classical country-house influences are to the fore - the man directing the culinary action is French, after all - in a repertoire built on prime local materials and a pitch-perfect grasp of how flavours and textures work together. Expect main courses such as chargrilled Irish beef fillet with fondant potato, baby spinach, celeriac purée and foie gras sauce, or wild sea bass matched with scallops, fennel compôte, vine tomatoes, and star anise cream. Bringing up the rear are desserts that might include buttermilk pannacotta with Irish rhubarb compôte and jelly.
