The George V Dining Room at Ashford Castle

There need be no quibbling about castle credentials here, for it's a castle and no mistake. Once the Guinness family summer retreat, it's a magnificent building with parts that date back to the 13th century. With its position by a lough, surrounded by the beautiful estate, Ashford Castle is a luxurious escape from the real world. The magnificence outside is matched within, not least in the George V Dining Room with its opulent fixtures and fittings and grand proportions - chandeliers, panelled walls, rich fabrics and well-dressed tables generously spaced around the room. There's a good deal of fine Irish produce on the classically-minded menu, and a roast of the day is carved at the table. Start, perhaps, with butter-seared Irish scallops served with crisp risotto cakes, pesto foam and raspberry coulis, followed by roast loin of local venison accompanied by a crisp samosa filled with venison and girolle mousse, plus a cheddar potato, carrot purée and blackberry jus. Finish with a well-crafted dessert of white chocolate and blackberries that shows sharp technical skills.
