The Ivy Restaurant at Dunboyne Castle Hotel & Spa

The main structure was built in the mid-1800s and looks suitably regal, with later tasteful development extending the space to the sprawling property seen today. It's all very contemporary on the inside, with a swish spa and modern meeting rooms, while the business of eating takes place in The Ivy restaurant. The modern Irish cooking is based on high-quality produce sourced with due diligence and cooked with skill. Pan-seared scallops with cauliflower purée, shards of crisp pancetta and black pudding powder is a fine version of a modern classic, or there might be brown crab salad with avocado purée and Granny Smith apples. Everything looks good on the plate and flavour combinations are well considered, not least in a main course of rack of new season lamb with braised neck and a glossy veal jus. Turbot might star in a main course, poached in red wine and partnered with samphire and bok choy, plus girolles and a garlicky pommes purée. A dessert of lemon and pink praline meringue pie with Earl grey and lemon sorbet brings down the curtain in style.
