The Castle Leslie Estate extends over 1,000 acres, sprinkled with ancient woodlands and lakes, and boasts two plush boltholes - the Castle and The Lodge - operating as separate country-house hotels, each with a distinct identity. The boutique-style lodge comes with a luxury spa, and Snaffles, a large, stylish contemporary restaurant with a hand-carved ceiling, oak beams, a glass wall opening the space up to country views, and a baby grand piano to add to the refined atmosphere. The kitchen keeps its finger on the pulse of culinary trends, turning out up-to-date country house cooking. Lough Neagh smoked eel gets things under way, matched intelligently with beetroot risotto, foam and crème fraîche. Then Fermanagh Saddleback pork gets a workout, arriving as rolled roasted fillet and slow-cooked belly with black pudding soufflé, apple, red cabbage, and caramelised onion mash. If you're up for fish, there might be pan-fried turbot with carrot gratin Muscat butter sauce. Finish with coffee and caramel macaroon with praline sauce and vanilla ice cream.
