The Douglas Hyde Restaurant at Kilronan Castle Estate and Spa

Kilronan certainly looks like a real castle complete with a foursquare crenellated turret, but it is actually a mere stripling, dating from the early 19th century, and after a thorough restoration as recently as 2006, it now trades as an upmarket hotel with luxurious spa and leisure facilities. The interior sports the full-dress Victorian Gothic look, a style which works to particularly impressive effect in the Douglas Hyde restaurant, where oak panelling galore and a magnificent carved fireplace combine with crystal chandeliers and heavy swagged drapes. Perhaps unsurprisingly, given the grand setting, the kitchen looks to French classicism for its inspiration, spiked here and there with oriental notes. Seasonal wild garlic is used together with ginger and chilli to lift a tian of crabmeat, while main course sees loin of venison glazed with honey, crushed pepper and herbs and served with roast squash and red wine sauce.
