Named after a castle once owned by Lord Mountbatten, the Classiebawn Restaurant is the culinary focus of this clean-cut modern hotel. Although the décor is faultlessly upmarket, it is the breathtaking views of Sligo Bay and Knockhaven Mountain that immediately grab your attention. The kitchen stays abreast of modern trends and serves up contemporary, internationally-inspired food made with fresh, seasonal, locally-sourced ingredients. Fussy embellishments are kicked into touch here in tried-and-tested stalwarts such as seared scallops with Clonakilty black pudding, creamed potatoes and chive butter sauce, or rump of Connemara lamb with braised Puy lentils teamed with confit garlic and thyme jus. Flavours are on the money to the end - a Classiebawn lemon tart made with an unstinting hand on the lemon zest, served with lime curd.
