Quite the enterprise, Inch House is the hub of a working farm run by the Egan family, which is not only a rather lovely country house hotel, but a hive of activity. They run the hotel and farm the land, but they also make preserves and chutneys which you can enjoy at home. There's plenty of comfort to be had at Inch House, though, with swish bedrooms and a relaxed service style that makes you feel like part of the family (almost). Needless to say the land provides a lot of the ingredients - they make their own black pudding, too - and what isn't home-grown won't have travelled very far. This is country-house cooking. Warm Gortnamona goats' cheese with a walnut and crumb crust is a simple enough starter, the cheese gently warmed through and served with salad from the garden and the house's red onion marmalade. Next up, suprême of chicken wrapped in bacon with a mushroom sauce, and for dessert, a berry crème brûlée.
