The Restaurant at Faithlegg House Hotel and Golf Resort

The original mansion, built in the 1780s, opened as a country-house hotel in 1998 after immaculate restoration. It has its own 18-hole golf course and leisure centre, while the high-ceilinged restaurant looks over the garden from what was a pair of drawing rooms. The cooking makes an impact, based as it is on native produce and a range of neat ideas. Boudin of black pudding with blue cheese foam, perry sorbet and Irish stout jus is a novel but effective starter. Move on to tea-smoked salmon fillet on mussel and saffron stew with pickled red onion flavoured with dill, or grilled loin and roast haunch steak of venison with roast celeriac and curly kale cream. End loyally with Irish artisan cheeses or Baileys crème brûlée.
