They don't do things by halves here at Druids Glen: the place boasts not just one, but two championship golf courses, plus the full package of spa pampering and leisure facilities in its acreages of landscaped grounds, with the Wicklow hills thrown in as a backdrop. Naturally, the place does a brisk trade in weddings and conferences, and when you have finished tieing the knot, team building or whacking balls around, there's straightforward modern cooking built on top-notch local materials in the Druids Brasserie. To views over the famous Druid Glen course, you might tee off with duck liver pâté with chutney (made with apples from the hotel's orchards) and toasted sourdough, then follow on with cutlet, loin and liver of local lamb with fondant potato, caramelised pearl onions, pea and mint purée and port sauce. Finish with apple tart Tatin with clotted cream or a platter of Irish cheeses.
