The distinguished grey Italianate Victorian mansion was built in 1883 for an engineer who pioneered the laying of the undersea telegraph connecting the British Isles to north America. Clad in climbing foliage, it gazes fondly out over the Irish Sea. An L-shaped dining room with high ceilings and vibrant green walls contains a mix of antique and modern furniture, as well as bare and clothed tables, and makes a diverting setting for Eddie McCormick's modernised country-house cooking. Ingredients are well-chosen and the timing and seasoning of dishes does them justice, as for an opening pairing of scallops and the famous Clonakilty black pudding of County Cork, with butternut purée and pea-shoots. Mains offer fine local meats such as herb-crusted Wicklow lamb rack in a provençal medium of chargrilled ratatouille veg and tomato fondue, or freshest fish such as Parma ham-wrapped cod with braised fennel, baby leeks and champ. A tarte Tatin variant made with pineapple is a success, the triumph ratified by its unabashedly boozy rum and raisin ice cream.
